❤️WHY WE LOVE THIS RECIPE
This recipe has only a few ingredients and comes together in about 30 minutes. These bars are also great for a small gathering. They are made in an 8X8 and are a great treat when you want a little something sweet. We love to top these with powdered sugar but you don’t have to if you are not a fan. They are delicious, the top forms a crust and the center is soft!
SWAPS
We received a comment below about using 2 cups of fresh pineapple and they came out great. So you can switch that out if you like. You can also use sweetened or unsweetened coconut.
⭐TIP
It’s important to really drain the pineapple, I like to put it in a strainer/colander and then use a fork to press out any liquid. The less liquid, the better they cook, so try your best to get as much liquid out as you can.

Pineapple Coconut Bars
These Pineapple Coconut Bars are only a few ingredients and come together quickly. Perfect when you need a quick dessert for a small group.
- 1 20 ounce can of Pineapple tidbits, drained well
- 1/2 cup of shredded coconut sweetened or unsweetened, your choice
- 1/2 cup of butter melted
- 2 eggs
- 1/4 teaspoon of baking soda
- 1 cup of flour
- 3/4 cup of sugar
- top with powdered sugar

Preheat the oven to 350 degrees. In a large bowl, add sugar, eggs and butter and mix well with the mixer, next add in flour and baking soda and mix until combined.

Fold in coconut and pineapple and pour into a greased 8X8 pan.

Cook for 28-33 minutes, until the center comes out clean. Let cool and sprinkle with powdered sugar.
I drain my pineapple in a colander and press juice out with a fork.
