We love how easy this casserole is and it has a great flavor. It’s a great side dish for any holiday gathering, from Easter to Christmas. Anytime we have served it, there is none left! It also comes together really well and is versatile. You can switch up the cheese and add any spices you like and other vegetables too.
SWAPS
This casserole is very versatile. You can swap out the white rice for brown rice. You could add other vegetables, like carrots and green beans. You can also swap out the cheese and change up the soup.
IS THE RICE COOKED?
Yes, you will make the rice and then add it to this casserole. One cup of uncooked rice will make two cups of cooked rice. This casserole takes about 3.5 cups of cooked rice, so you will need two cups of UNCOOKED rice, and once it is cooked, that will make around four cups.

Broccoli Rice Casserole
This Broccoli Rice Casserole is one you will make over and over again. It is perfect for any holiday gathering or just when you need a great side dish.
- 3.5 cups cooked rice
- 2 (10.8 ounce) packages frozen broccoli florets, thawed
- 1 can cream of mushroom soup with roasted garlice
- 1 small onion, chopped
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 2 cups shredded cheddar cheese

Preheat oven to 350 degrees.

Warm thawed broccoli in the microwave for about 5 minutes, remove and cut into smaller pieces.

In a medium size bowl, combine, cooked rice, milk, onion, soup, salt, pepper, smoked paprika, garlic powder, and one cup of cheese.

Fold in broccoli. Pour into a well greased 9X13 pan. Top with the remaining cheese.

Bake in preheated oven for 35-40 minutes. Remove and enjoy!
You don’t have to use the mushroom soup with garlic, you can use just mushroom soup. You could even use cream of chicken soup.
