Chocolate Fudge Brownie Ice Cream

Give me a brownie and ice cream over pretty much any other baked good and ice cream combination. So, naturally, a bowl of chocolate ice cream generously filled with fudgy chunks of brownies calls my name – loudly.

Chocolate Brownie Ice Cream

There’s something I simply can’t resist in the classic combination of chewy, fudgy brownies topped with a scoop of melting ice cream. And before we get too far into this mouthwatering recipe for brownie-filled ice cream, let’s not confuse this with the original Brownie Ice Cream – that ice cream = a bowl full of brownies blended into smooth, creamy ice cream. (It’s delicious as well!)

This chocolate fudge brownie ice cream starts with a rich, deep chocolate ice cream that is then fully loaded with chunks of chocolatey, chewy, fudgy brownies. My favorite brownies to add to this ice cream are Cosmic Brownies (skip the candies on top) because the extra fudgy brownies (with or without the frosting on top) just add to the awesomeness of this ice cream.

And to make your chocolate brownie ice cream even more irresistible, drizzling some hot fudge sauce through the churned ice cream while layering it into a freezer container will deliver sweet swirls of fudge in every bite along with those fantastic bites of chewy fudge brownie.

Side note – PLEASE make sure that the hot fudge sauce is no warmer than room temperature when you drizzle it into the ice cream. We don’t want that lovely freshly-churned ice cream to start melting before you can tuck it back into the freezer to firm up for serving!

Brownies and Ice Cream

Who doesn’t love a warm chocolate brownie with ice cream? In all seriousness, I don’t think I’ve ever met that person. For another great brownie ice cream combination, try a batch of Caramel Swirled Brownie Chunk Ice Cream next time.

Caramel sauce + brownie chunks + creamy vanilla ice cream = an AWESOME way to celebrate pretty much any occasion. And if you’re lucky enough to have a couple of brownies stashed in the freezer and a jar of caramel sauce on hand, you can make that ice cream in mere minutes.

Chocolate Fudge Brownie Ice Cream

You’ll need the following ingredients to make this ice cream:

  • heavy cream
  • cocoa powder
  • sugar
  • kosher salt
  • semi-sweet chocolate chips
  • milk
  • vanilla extract
  • brownies

Chocolate Brownie Ice Cream Recipe

In a large saucepan, combine the cream, cocoa, sugar, and salt. Whisk to combine and then heat over medium heat, stirring continually, until it comes together and begins to steam and simmer. If you wish, you may increase the heat, but continue stirring non-stop. Do not step away at this point.

Remove from the heat and immediately add the chocolate. Whisk until the chocolate has completely melted. Stir in the milk and vanilla. Cool and refrigerate for at least 4 hours or overnight until completely cold. Process according to your machine’s instructions.

When the mixture finishes churning, transfer about a third of it to a freezer safe container. Scatter brownie pieces over each layer of ice cream and repeat the layering with another third of the ice cream. Scatter more brownie chunks over this layer. Repeat with the remaining ice cream and brownies.

Cover with a lid and freeze until ready to serve. Scoop into bowls and serve over brownies or with additional brownie chunks, if desired.

Ice Cream with Brownies

Brownie Berry Ice Cream starts with a vanilla bean ice cream base that is swirled with marionberry preserves and generously filled with chunks of chewy chocolate brownies. This ice cream was the result of a trip to Portland and my instant food-love-affair with marionberries.

Crunchy, chewy Oreo pieces and chunks of decadent brownie mingle together in every scoop of this Oreo Brownie Ice Cream. I love the way intense chocolate is elevated by lightly sweet vanilla ice cream. The textures alternate between crunchy, chewy, and smooth.
